Single Serving No-Bake Confetti Cheesecake

Hello friends.  We finally have sunshine and blue skies here on the East Coast and I can’t wait to be outdoors this weekend.  My family and I will be enjoying the Wine and Jazz Festival at Longwood Gardens this weekend and I am so excited.  It is such a magical place to visit.  Especially if you love touring gardens.

But today, I am sharing an easy and quick no-bake dessert.  And lets be honest, who really wants to spend time in the kitchen when the warm weather finally comes around.  If you enjoy light and fluffy desserts, then this easy to make – single serve confetti cheesecake recipe is for you!  

Best thing about this recipe, is that it can be whipped up in a matter of minutes.  Perfect to satisfy that weeknight dessert craving!

I love this recipe as it’s all the best bits of a classic cheesecake.

To make my Single Serve Cheesecake, start by making a classic no bake cheesecake base of cream cheese, cream, sugar and vanilla. Before you know it this dessert is halfway done. Next, just simply add in a bit of pink food coloring and just like that, your main part of this delicious dessert is done.
To assemble, layer toasty crushed Graham Crackers and the pink Cheesecake filling in a pretty glass. Finish with and a dollop of whipped cream and a few sprinkles and your fabulous no-bake cheesecake is done!

  • 1 cup (8oz /225g) cream cheese

  • 1/2 cup (4floz/115ml) heavy cream
  • 1/4 cup (2oz/57gg) sugar
  • 1/2 cup (11/2oz/ 43g) crushed graham crackers
  • 2 tablespoons (1oz/30g) butter, melted
  • Pink food coloring
  • Whipped cream for topping
  • Pastel Confetti sprinkles for topping

  1. First make your cheesecake filling – In a medium bowl whip the softened cream cheese by hand or using an electric hand mixer until light and fluffy. Add in the cream, sugar, vanilla extract, and 1 drop of pink food coloring. Whip until thick, fluffy and all of the sugar has dissolved and the mix is even in light pink color. Set aside.
  2. To make your “crust” layer combine the crushed graham crackers with the melted butter in a small bowl. Set aside.
  3. Next assemble your single serve cheesecake. In your serving glass begin to layer the crushed Graham Crackers and cheesecake filling to top of glass being careful to keep each layer defined.
  4. Top with whipped cream, and sprinkles. Enjoy!
  5. Keep in the fridge for up to 3 days.

Talk about eating with your eyes!  This dessert is beyond gorgeous and such a yummy way to indulge in something special.  I can’t wait for you to try it!
